Mimi’s Apple Bread

Ingredients

  • 5 small McIntosh apples, peeled and cut into rough 1/4-inch chunks
  • 1 1/2 cups sugar
  • 1/2 teaspoon lemon zest, finely grated
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg, freshly grated
  • 1/2 teaspoon fine salt
  • 2/3 cup vegetable oil
  • 2 large eggs
  • 1/2 teaspoon pure vanilla extract

Directions

Step 1 –Work the apples, the sugar, and the lemon zest together in a large bowl with your hands until the sugar feels like wet sand.

Step 2 –Let the apple mixture sit, tossing occasionally, until the sugar starts to melt but is still gritty, about 30 minutes.

Step 3 –Preheat the oven to 350 degrees F.

Step 4 –Generously coat a 10x5x3-inch loaf pan with cooking spray.

Step 5 –Sift the flour, the baking soda, the cinnamon, the nutmeg, and the salt together onto a large piece of parchment paper.

Step 6 –Whisk the oil, the eggs, and the vanilla together in a medium bowl.

Step 7 –Add the flour mixture to the apple mixture and fold until just combined.

Step 8 –Add the oil mixture to the batter mixture and fold until just combined.

Step 9 –Pour the batter into the prepared loaf pan and tap the pan on the counter until the batter is settled and evened out.

Step 10 –Bake the bread until the top is golden-brown and bounces back when pressed, 55 minutes-1 hour.

Step 11 –Let the bread sit in the pan on a wire rack until it is cool enough to handle.

Step 12 –Invert the bread out of the pan and slice.

Step 13 –Serve.
