  • 2 tablespoons olive oil
  • 1 pound asparagus, trimmed and cut into 3-inch pieces
  • 2 tablespoons mint, chopped
  • 1/2 lemon, juiced
  • salt, to taste
  • ground black pepper, to taste


Step 1 –Heat the olive oil in a large, shallow pan over medium heat.

Step 2 –When the oil is hot, arrange the asparagus evenly over the bottom of the pan.

Step 3 –Cook for 2-3 minutes, and stir once.

Step 4 –Continue cooking, stirring as needed, until the asparagus is bright green and tender, about 6-8 minutes.

Step 5 –Stir in the mint and cooking until fragrant, about 30 seconds.

Step 6 –Remove the pan from the heat.

Step 7 –Squeeze lemon juice over the asparagus.

Step 8 –Season the asparagus with salt and pepper.

Step 9 –Serve!
