Mom’s Favorite Breakfast Quiche

Mom has always absolutely loved breakfast time. We don’t know if it’s the quiet before the chaos, the amazing food, or her cup of coffee that has made her love it so much, but it’s been her favorite for as long as we can remember. Her go-to morning munch of choice is Mom’s Favorite Breakfast Quiche… she named it herself. It’s fairly easy to make, can be made and reheated ahead of time, and comes loaded with all sorts of flavors you love in a good quiche. We like to think she enjoys it because it makes her feel kind of fancy, even when things are a little crazy around her. So, if you’re craving a little bit of that for yourself as you start your day, give Mom’s Favorite Breakfast Quiche a try. She might be on to something!

Ingredients

For the crust:

  • 1 1/4 cups all-purpose flour, plus more, to taste, for dusting a work surface
  • 1/4 teaspoon salt
  • 1/2 cup butter, cold
  • 3 tablespoons ice water, plus more, to taste

For the filling:

  • 12 bacon strips, cooked and crumbled
  • 1/2 cup Pepper Jack or Monterey Jack cheese, shredded
  • 1/2 cup sharp cheddar cheese, shredded
  • 1/3 cup onion, finely chopped
  • 4 large eggs
  • 2 cups heavy whipping cream
  • 3/4 teaspoon salt
  • 1/4 teaspoon sugar
  • 1/8 teaspoon cayenne pepper

Directions

Step 1 –In a bowl, combine 1 1/4 cups of the flour and 1/4 teaspoon of the salt.

Step 2 –Cut the butter into the flour mixture until it is crumbly.

Step 3 –Gradually add 3 tablespoons of the ice water into the flour mixture and toss with a fork until the dough holds together when pressed. Add more of the ice water if needed to reach the desired texture.

Step 4 –Wrap the dough in plastic wrap and refrigerate for 1 hour.

Step 5 –Preheat the oven to 450 degrees F.

Step 6 –Using the extra flour, lightly dust a work surface. Place the dough on the floured surface and roll it into an 1/8-inch-thick circle.

Step 7 –Transfer the dough to a 9-inch pie plate.

Step 8 –Trim the crust to 1/2-inch beyond the rim of the plate and flute the edge.

Step 9 –Line the crust with two layers of heavy-duty foil and bake for 5 minutes.

Step 10 –Discard the foil and bake the crust for 5 minutes.

Step 11 –Place the crust on a wire rack to cool.

Step 12 –Reduce the oven temperature to 375 degrees F.

Step 13 –Add the bacon, the Pepper Jack cheese, the cheddar cheese, and the onion to the crust.

Step 14 –In a bowl, add the eggs, the whipping cream, the remaining salt, the sugar, and the cayenne pepper and whisk to combine.

Step 15 –Pour the egg mixture over the bacon mixture.

Step 16 –Bake the quiche until a knife inserted into the center comes out clean, about 30-35 minutes.

Step 17 –Let the quiche stand for 10 minutes.

Step 18 –Slice and serve.
