Mother’s Day Pasta

It’s plain and simple. Momma deserves to be celebrated. And sure, you could take her out to eat, but you know just as well that she would love to be wined and dined from the comfort of your home, too. So, set the table real nice and make her this Mother’s Day Pasta! She’ll feel so cared for as she bites into those tender bowtie pasta noodles and spicy pork sausage swaddled in a tangy, creamy tomato sauce. And the addition of the nourishing broccoli florets will make her so proud that you listened to her when she taught you about how important it is to incorporate veggies into all your dishes. It’s going to be a great day with Mother’s Day Pasta on her plate! She will be so proud!

Ingredients

  • 2 tablespoons olive oil
  • 1 pound mild Italian pork sausage, casings removed
  • 3 cloves garlic, chopped
  • 1 pound bowtie pasta
  • 3 cups chicken broth
  • 2 cups water
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 4 cups small broccoli florets
  • 1/2 cup sun-dried tomatoes, julienned and drained of oil
  • 1/3 cup heavy cream
  • 1/2 cup parmesan cheese, grated, plus more, to taste, for serving
  • 2 tablespoons fresh lemon juice
  • red chili flakes, optional, to taste, for serving

Directions

Step 1 –In a large pot over medium-high heat, add the olive oil and the sausage and cook, while breaking up the meat, until it is no longer pink, about 5-7 minutes.

Step 2 –Use a slotted spoon to transfer the sausage to a plate and set aside.

Step 3 –Reduce the heat to medium, add the garlic cloves to the pot, and cook for 1 minute.

Step 4 –Add the pasta, the broth, the water, the oregano, the salt, and the pepper to the pot and bring to a simmer.

Step 5 –Reduce the heat to medium-low to keep the pasta mixture simmering and stir occasionally.

Step 6 –Stir the broccoli into the pasta mixture.

Step 7 –Cover the pot and cook, stirring halfway through, until the pasta and the broccoli are just tender, about 5 minutes.

Step 8 –Add the sun-dried tomatoes, the heavy cream, and the cooked sausage to the pasta mixture and cook until it is heated through, about 1 minute.

Step 9 –Transfer the pot from the heat and stir in the parmesan cheese and the lemon juice.

Step 10 –Top the pasta with the extra parmesan cheese and the red chili flakes.

Step 11 –Serve.
