Oh-My Loaded Meatloaf Casserole

This Oh-My Loaded Meatloaf Casserole will have you shouting all sorts of exclamations with every bite! The foundation of juicy, flavorful beef will make you say, “oh wow!” And then when you begin to taste the creamy, buttery, cheesy, bacon-y, loaded mash potatoes on top, you will say “how did they come up with this?!” Yeah, Oh-My Loaded Meatloaf Casserole tends to have that loud effect on everyone’s tastebuds. And how could it not? Combining two of your nostalgic, childhood favorites into one savory, hearty, delicious dish could never result in silence!

Ingredients

For the meatloaf:

  • 1 1/2 pounds ground beef
  • 1/4 yellow onion, finely chopped
  • 2/3 cup seasoned dry breadcrumbs
  • 1/3 cup whole milk
  • 1 large egg, lightly beaten
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon coarse ground black pepper

For the mashed potatoes:

  • 2 pounds potatoes, peeled and cut into 1-inch chunks
  • 1/3 cup unsalted butter
  • 1/2 cup whole milk
  • 1 teaspoon salt
  • 1/2 teaspoon coarse ground black pepper
  • 1 cup cheddar cheese, shredded
  • 1/2 cup bacon bits, cooked and crumbled

Directions

Step 1 –Preheat the oven to 375 degrees F.

Step 2 –In a large bowl, gently combine the beef, the onion, the breadcrumbs, the milk, the egg, 1/2 teaspoon of the salt, and 1/4 teaspoon of the pepper.

Step 3 –Press the beef mixture into a 9×9-inch baking dish.

Step 4 –Bake the beef mixture, uncovered, for 15 minutes. Drain the excess grease.

Step 5 –In a large pot, combine the potatoes and just enough water to cover the potatoes, bring the water to a boil, and cook for 15 minutes.

Step 6 –Drain the water from the potatoes.

Step 7 –Add the butter, the milk, the remaining salt, and the remaining pepper to the potatoes and mash together until creamy.

Step 8 –Spread the potato mixture over the beef mixture and top with the cheddar cheese and the bacon.

Step 9 –Bake the casserole until the bacon is sizzling, the cheese is bubbling, and the mashed potatoes are slightly crispy, about 15 minutes.

Step 10 –Serve.
