On-The-Bayou Soup

Heading to the backcountry for a great homecooked meal sounds like a great idea, doesn’t it? On-The-Bayou Soup takes it even one step further by adopting that easy-going country attitude people love so much! It’s a slow-cooked bean soup, with the classic Deep South combination of onion, green pepper, celery, and lots of garlic, all cooked in a savory chicken broth. It’s tender and just loaded with juicy turkey and spicy sausage… mmmm, head on down to the water with a bowl of On-The-Bayou Soup and let the stress melt away!

Ingredients

  • 1 (20-ounce) package Hurst’sĀ® HamBeensĀ® Cajun 15 Bean SoupĀ®, plus the enclosed seasoning packet
  • 1 large onion, diced
  • 1 green bell pepper, diced
  • 1 cup celery, diced
  • 2 cloves garlic, chopped
  • 4 cups low-sodium chicken broth
  • 2 cups water
  • 2 cups turkey, cooked and diced
  • 1/2-pound smoked sausage, sliced
  • 1 (14.5-ounce) can diced tomatoes
  • salt, to taste
  • pepper, to taste
  • parsley, optional, to taste, chopped, for garnish

Directions

Step 1 –Rinse the beans and remove any unwanted debris.

Step 2 –In a 6-quart slow cooker, add the beans, the onion, the bell pepper, the celery, the garlic, the chicken broth, the water, and the turkey.

Step 3 –Cover and cook on high until the beans are tender, about 5-7 hours.

Step 4 –Add the reserved seasoning packet, the sausage, and the tomatoes and their juices to the slow cooker and cook until heated through and the flavors meld together, about 30 minutes.

Step 5 –Taste for seasoning and add the salt and the pepper, as needed.

Step 6 –Serve garnished with the parsley.
