Orange-Chocolate Bread

Ingredients

  • 10 tablespoons unsalted butter, softened
  • 2 tablespoons golden syrup or dark corn syrup
  • 1 cup dark brown sugar, packed
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 3 tablespoons unsweetened cocoa powder, sifted
  • salt, to taste
  • 2 eggs
  • 2 small oranges, zested, plus 3 tablespoons orange juice, freshly squeezed

Directions

Step 1 –Preheat the oven to 325 degrees F.

Step 2 –Line all sides of a 9x5x3-inch loaf pan with parchment paper or grease the pan.

Step 3 –In a large bowl with an electric mixer, add the butter, the golden syrup, and the dark brown sugar and beat to combine.

Step 4 –In a separate large bowl, add the flour, the baking soda, the cocoa powder, and the salt and whisk to combine.

Step 5 –Add 1 tablespoon of the flour mixture to the butter mixture and beat to combine.

Step 6 –Add 1 egg to the butter mixture and beat to combine.

Step 7 –Add 2 tablespoons of the flour mixture to the butter mixture and beat to combine.

Step 8 –Add the remaining egg to the batter mixture and beat to combine.

Step 9 –Add the remaining flour mixture to the batter mixture and beat to combine.

Step 10 –Add the orange zest to the batter mixture and beat to combine.

Step 11 –Gradually add the orange juice to the batter mixture and beat to combine. Note: The batter may look slightly curdled due to the acidity in the juice.

Step 12 –Add the batter to the prepared loaf pan.

Step 13 –Bake until the edges look dry and the center dips slightly, about 45 minutes.

Step 14 –Transfer the baked bread from the oven to a wire rack and let it cool, about 5-10 minutes.

Step 15 –Carefully remove the bread from the pan directly onto the wire rack and let it cool completely. Discard the parchment paper as the bread cools.

Step 16 –With a serrated knife, cut the baked bread into serving-sized slices and serve.
