Poker Night Enchiladas

Poker Night Enchiladas are here to help feed you and a card table of your friends in the best way possible! Layers of tender tortillas, juicy chicken, and spicy red enchilada sauce are nestled between melty cheese and hearty black beans, then baked until bubbly! You’ll definitely find yourself with a winning hand with Poker Night Enchiladas on a plate by your side! Your taste buds will certainly be going home with a winning feeling!

Ingredients

For the casserole:

  • 2 (14-ounce) cans red enchilada sauce
  • 6-8 corn tortillas, halved
  • 1 (14-ounce) can black beans, drained and rinsed
  • 2 cups chicken, cooked and shredded
  • 1 (4-ounce) can chopped green chiles
  • 2 cups cheddar cheese, grated

Optional toppings:

  • 4 green onions, chopped
  • 2 tomatoes, diced
  • 1 avocado, diced
  • 1/4 cup black olives, sliced
  • cilantro leaves, to taste

Directions

Step 1 –Preheat the oven to 375 degrees F.

Step 2 –Coat a 9×13-inch baking dish with nonstick spray.

Step 3 –In the bottom of the prepared baking dish, spread 3/4 cup of the enchilada sauce.

Step 4 –Layer 1/2 of the tortilla halves on top of the enchilada sauce layer, adding just enough to cover the bottom of the dish.

Step 5 –Layer 1/2 of the black beans, 1/2 of the chicken, 1/2 of the green chiles, and 3/4 cup of the grated cheddar cheese, in that order, on top of the tortilla layer.

Step 6 –Repeat the layers once using 3/4 cup of the enchilada sauce, the remaining tortillas, the remaining black beans, the remaining chicken, the remaining chiles, and 3/4 cup of the grated cheese.

Step 7 –Add the remaining sauce on top of the casserole, spreading it out evenly.

Step 8 –Coat a piece of aluminum foil with nonstick spray.

Step 9 –Cover the pan tightly with the prepared foil, greased-side down.

Step 10 –Bake the dish until heated through and the tortillas are soft, about 30 minutes.

Step 11 –Sprinkle the bake with the remaining cheese and bake until melty, about 5 minutes.

Step 12 –Top the casserole with the green onions, the tomatoes, the avocado, the olives, and the cilantro leaves.

Step 13 –Serve.
