Ingredients
- 6 cups chicken broth
- 6 green onions, chopped, plus more, to taste, for serving
- 1 (30-ounce) bag frozen shredded hash browns
- 2 teaspoons salt
- 1/2 teaspoon black pepper
- 1 cup heavy cream
- 1 cup cheddar cheese, grated, plus more, to taste, for serving
Directions
Step 1 –Into a pressure cooker, add the chicken broth, 6 of the chopped green onions, the hash browns, the salt, and the pepper.
Step 2 –Lock the lid and set the cooker to high pressure for 5 minutes.
Step 3 –Let the pressure cooker sit for 5 minutes.
Step 4 –Carefully and safely release all remaining pressure.
Step 5 –Turn on the sauté function of the pressure cooker.
Step 6 –Add in the heavy cream and stir to combine.
Step 7 –Add in 1 cup of the cheddar cheese and cook, while stirring constantly, until melted, no large chunks of cheese remain, and the soup has thickened.
Step 8 –Serve with the extra cheddar cheese and the extra green onions.
