Poppy Lemon Cake

Here’s proof that when sweet, tart, and sassy come together, it is pure bliss! Poppy Lemon Cake is a perfect trifecta of flavors that come together in an elegant way. Moist, lemon enhanced cake mingles well with the nuttiness of the poppy seeds for a one-of-a-kind flavor sensation. Appropriately brushed with a sweetly tart lemon glaze, your tongue will tingle with delight from Poppy Lemon Cake. So much sass and so much class! It’s so delicious!

Ingredients

  • 1 (15.25-ounce) box lemon cake mix
  • 1 (3.4-ounce) package instant lemon pudding mix
  • 3/4 cup water, warm
  • 1/2 cup canola oil
  • 4 large eggs, room temperature
  • 1 teaspoon lemon extract
  • 1 teaspoon almond extract
  • 1/3 cup poppy seeds
  • 1/2 cup confectioners’ sugar, plus more, optional, to taste
  • 1 lemon, juiced

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Grease a 10-inch fluted tube pan.

Step 3 –In a large bowl, add the lemon cake mix and the lemon pudding mix and whisk to combine.

Step 4 –With an electric hand mixer on low speed, add the warm water, the canola oil, the eggs, the lemon extract, and the almond extract to the cake mix mixture and beat, about 30 seconds.

Step 5 –With the mixer increased to medium speed, beat the batter mixture until smooth, about 2 minutes.

Step 6 –Add the poppy seeds into the batter mixture and stir to combine.

Step 7 –Evenly pour the batter mixture into the prepared fluted tube pan.

Step 8 –Bake until a toothpick inserted into the center comes out clean, about 50-60 minutes.

Step 9 –Transfer the baked cake from the oven to a wire rack and let the cake cool in the pan for about 10 minutes.

Step 10 –Invert the cake onto the wire rack, removing the pan and allowing the cake to cool more (but not completely) while you make the glaze.

Step 11 –In a medium bowl, add 1/2 cup of the confectioners’ sugar and the lemon juice and whisk to combine.

Step 12 –With a pastry brush, evenly brush the glaze mixture over the top of the still-warm cake.

Step 13 –Dust the glazed cake with the extra confectioners’ sugar.

Step 14 –Slice and serve.
