Protein Taco Casserole

If you’re really, really hungry then Protein Taco Casserole is what you need. And once you taste the juicy beef, topped with tender veggies and melty cheese, with all your favorite Tex-Mex toppings right on top, it’ll be the bake you really want, too. So get ready to be really, really full thanks to Protein Taco Casserole!

Ingredients

For the casserole:

  • 1 tablespoon avocado oil
  • 2 pounds ground beef
  • 3/4 cup water
  • 1/4 cup taco seasoning
  • 2 large bell peppers, diced
  • 1/4 large onion, diced
  • 2 (10-ounce) cans diced tomatoes with green chilies, drained
  • 1 cup cheddar cheese, shredded

Toppings:

  • iceberg lettuce, to taste, shredded
  • fresh tomatoes, to taste, chopped
  • avocados, to taste, cubed
  • fresh cilantro, to taste, chopped
  • sour cream, to taste

Directions

Step 1 –Preheat the oven to 375 degrees F.

Step 2 –In a large skillet, heat the avocado oil over medium-high heat.

Step 3 –Add the ground beef to the skillet and cook, breaking it apart with a spatula, until it is no longer pink, about 8-10 minutes.

Step 4 –Add the water and the taco seasoning to the beef and bring it to a boil.

Step 5 –Simmer the beef mixture until it thickens, about 2-5 minutes.

Step 6 –Transfer the beef mixture to a 9×13-inch baking dish.

Step 7 –Add the diced peppers, the onions, and the diced tomatoes with green chilies to the beef mixture and stir to combine.

Step 8 –Sprinkle the cheese over the top of the beef mixture.

Step 9 –Bake the casserole until it is hot and bubbly, about 20-30 minutes.

Step 10 –Serve the casserole with the lettuce, the fresh tomatoes, the avocados, the cilantro, and the sour cream.
