Ingredients
For the casserole:
- 1 tablespoon avocado oil
- 2 pounds ground beef
- 3/4 cup water
- 1/4 cup taco seasoning
- 2 large bell peppers, diced
- 1/4 large onion, diced
- 2 (10-ounce) cans diced tomatoes with green chilies, drained
- 1 cup cheddar cheese, shredded
Toppings:
- iceberg lettuce, to taste, shredded
- fresh tomatoes, to taste, chopped
- avocados, to taste, cubed
- fresh cilantro, to taste, chopped
- sour cream, to taste
Directions
Step 1 –Preheat the oven to 375 degrees F.
Step 2 –In a large skillet, heat the avocado oil over medium-high heat.
Step 3 –Add the ground beef to the skillet and cook, breaking it apart with a spatula, until it is no longer pink, about 8-10 minutes.
Step 4 –Add the water and the taco seasoning to the beef and bring it to a boil.
Step 5 –Simmer the beef mixture until it thickens, about 2-5 minutes.
Step 6 –Transfer the beef mixture to a 9×13-inch baking dish.
Step 7 –Add the diced peppers, the onions, and the diced tomatoes with green chilies to the beef mixture and stir to combine.
Step 8 –Sprinkle the cheese over the top of the beef mixture.
Step 9 –Bake the casserole until it is hot and bubbly, about 20-30 minutes.
Step 10 –Serve the casserole with the lettuce, the fresh tomatoes, the avocados, the cilantro, and the sour cream.
