Pudding Cookies

Sure, Pudding Cookies look like your typical chocolate chip cookies. First of all, there is never anything off-putting about a freshly baked disc loaded with melty chocolate, so these are already off to a good start. What really makes these little delights so special is the addition of vanilla pudding mix. Now, before you start thinking about that too much, just know it makes them even fluffier, chewy, and moister than you’re used to! An even better chocolate chip cookie?! Yep, that’s what Pudding Cookies are. Whip ’em up and see for yourself!

Ingredients

  • 1 cup butter, softened
  • 3/4 cup light or dark brown sugar, packed
  • 1/4 cup white sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 (3.5-ounce) package instant vanilla pudding mix
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups semisweet chocolate chips

Directions

Step 1 –Preheat the oven to 375 degrees F.

Step 2 –In a large mixing bowl, use an electric mixer to cream the butter, the brown sugar, and the white sugar together.

Step 3 –Add the eggs to the butter mixture, one at a time, and mix after each addition.

Step 4 –Add the vanilla extract to the butter mixture and stir to incorporate.

Step 5 –In a medium bowl, add the flour, the pudding mix, the baking soda, and the salt and stir to combine.

Step 6 –Slowly add the flour mixture into the butter mixture, stirring continuously, until it is completely combined.

Step 7 –Fold the chocolate chips into the batter.

Step 8 –Use a medium cookie scoop to scoop the batter onto a nonstick cookie sheet.

Step 9 –Bake the cookies until their edges are golden-brown and centers are just set, about 9-11 minutes.

Step 10 –Serve.
