Pueblo’s Sloppy Burger

Pueblo’s Sloppy Burger, or the Pueblo slopper, is a beloved culinary tradition of Pueblo, Colorado. It consists of a juicy hamburger smothered in cheese and a spicy, pork-filled green chili. It’s served in a bowl, that’s how sloppy Pueblo’s Sloppy Burger can get! There’s no need for ketchup with this burger; all the flavor is already packed in with this soon-to-be-newest lunchtime favorite!

Ingredients

  • 1/2 pound ground beef, formed into 2 patties and seasoned as desired
  • 4 slices onion
  • 2 cloves garlic, peeled, for flavoring the meat during grilling
  • 2 pounds pork green chili, homemade, heated, can substitute 32 ounces canned green chili sauce with pork
  • 2 hamburger buns, split and toasted
  • 1 cup aged white cheddar, grated
  • 1 cup cheddar cheese, grated
  • 3 leaves Romaine lettuce, chopped
  • 1/2 cup black olives, sliced
  • 4-5 small vine tomatoes, sliced
  • 1/2 cup chipotle sour cream, homemade, can substitute creamy chipotle sauce, store-bought
  • 1/2 cup Mexican salsa

Directions

Step 1 –Preheat the grill to medium-high heat, making sure it’s set for chargrilling.

Step 2 –Add the beef patties, the onion slices, and the garlic and grill to your desired level of doneness, about 3-4 minutes per side. Discard the garlic once you’re done grilling the patties.

Step 3 –In two shallow bowls, add some of the pork green chili, as desired, forming a base layer in each dish.

Step 4 –In each bowl, add one of the toasted bun-bottoms and evenly divide 1/2 of the aged white cheddar and 1/2 of the cheddar cheese across the tops of both buns.

Step 5 –Place a patty on top of each cheese-covered bun.

Step 6 –Pour more of the remaining pork green chili on top of each patty, as desired, and then evenly sprinkle the remaining aged white cheddar and cheddar cheeses across the tops of both patties.

Step 7 –Evenly distribute the chopped lettuce, the grilled onions, the sliced olives, the sliced tomatoes, the sour cream, the salsa, and the bun-tops amongst both bowls, letting the toppings spill over the sides of the burger to fill the bowls, if desired.

Step 8 –Serve.
