Puff-Pastry Croque Madame

Puff-Pastry Croque Madame, the fanciest of breakfasts for the fanciest of people! But don’t let that name fool you… this is a simple dish that takes you less than 30 minutes to whip up. Flaky, buttery puff pastries hold the joy that is your soon to be breakfast: melty cheese, salty ham, and a whole egg! What a masterpiece to bite into! There’s not a single better way to start off your day than with Puff-Pastry Croque Madame!

Ingredients

  • 2 sheets frozen puff pastry, thawed to room temperature
  • 1 whole egg, whisked in a small bowl with 1 teaspoon of water
  • kosher salt, to taste
  • 8 slices Black Forest Ham
  • 6 ounces Gruyere cheese, shredded
  • 8 whole eggs
  • ground black pepper, to taste
  • chives, chopped, for garnish

Directions

Step 1 –Preheat the oven to 400 degrees F.

Step 2 –Roll out each puff pastry sheet into an equal square.

Step 3 –Cut each sheet into 4 equal squares.

Step 4 –Lay each square evenly spaced apart on 2 large sheet pans lined with parchment paper.

Step 5 –Poke holes in the center of the puff pastry squares with a fork.

Step 6 –Brush the puff pastry squares with the egg wash and season with the salt.

Step 7 –Lay the ham on top of the puff pastry squares.

Step 8 –Sprinkle the cheese on top of the center of the ham leaving a space to crack the eggs into.

Step 9 –Place the squares in the oven and bake until the edges are beginning to puff, about 10-15 minutes.

Step 10 –Using the back of a spoon, press a slight divot into the center of the pastry squares.

Step 11 –Crack the eggs into the divots.

Step 12 –Season the eggs with the salt and the pepper.

Step 13 –Bake until the egg whites are set and the puff pastry is golden, about 10-15 minutes.

Step 14 –Garnish with the chives and serve.
