Quick Shepherd’s Pie Skillet

Ingredients

  • 1 pound ground beef
  • 1 cup onion, chopped
  • 2 cups frozen corn, thawed
  • 2 cups frozen peas, thawed
  • 2 tablespoons ketchup
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons garlic, minced
  • 1 tablespoon cornstarch
  • 1 teaspoon beef bouillon granules
  • 1/2 cup cold water
  • 1/2 cup sour cream
  • 3 1/2 cups mashed potatoes, cooked
  • 3/4 cup cheddar cheese, shredded

Directions

Step 1 –Heat a large skillet over medium heat.

Step 2 –Add the beef and the onion to the skillet and cook, while crumbling the meat, until the beef is no longer pink, about 5-7 minutes.

Step 3 –Drain any excess liquid from the skillet.

Step 4 –Add the corn, the peas, the ketchup, the Worcestershire sauce, and the garlic to the beef.

Step 5 –Reduce the heat to medium-low, cover, and cook the beef mixture for 5 minutes.

Step 6 –In a small bowl, combine the cornstarch, the bouillon, and the water and blend.

Step 7 –Add the cornstarch mixture to the beef mixture and stir to combine.

Step 8 –Bring the beef mixture to a boil and cook over medium heat, stirring frequently, until it thickens, about 2 minutes.

Step 9 –Add the sour cream to the beef mixture and cook until it is heated through.

Step 10 –Spread the mashed potatoes over the top of the beef mixture and sprinkle with the cheese.

Step 11 –Cover the pie and cook until the potatoes are heated through and the cheese has melted, about 5-7 minutes.

Step 12 –Serve.
