Roasted Brown Sugar Carrots

No fancy Sunday dinner is needed to enjoy these Roasted Brown Sugar Carrots! Any regular meal is perfectly suitable for pairing with some of these garden fresh, tender, and sweet carrots! That being said, you absolutely can still enjoy these sugary and cinnamon-y bites alongside that big old classic ham dinner if that’s what you’d like… or just keep it simple and serve this dish with some chicken or even atop some kind of rice bowl! Whatever way you choose to enjoy them, you’ll get to chow down on these Roasted Brown Sugar Carrots, and that’s always a win!

Ingredients

  • 12 carrots, peeled and cut in half
  • salt, to taste
  • pepper, to taste
  • 1 teaspoon cinnamon
  • 1/4 cup brown sugar
  • 4 tablespoons butter, diced and melted
  • parsley, to taste, for serving

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Line a baking sheet with parchment paper.

Step 3 –Place the carrots onto the prepared baking sheet, sprinkle them with the salt, the pepper, the cinnamon, and the brown sugar, and gently toss to coat.

Step 4 –Pour the melted butter over the carrots.

Step 5 –Roast the carrots, tossing them halfway through, until they are cooked through, about 25-30 minutes.

Step 6 –Sprinkle the carrots with the parsley.

Step 7 –Serve.
