Ingredients
- 1 tablespoon butter
- 1 medium onion, chopped
- 3 medium carrots, sliced
- 2 medium stalks celery, chopped
- 1 cup frozen lima beans
- 8 cups turkey broth
- salt, to taste
- pepper, to taste
- 2 cups rice, cooked
- 1 1/2 cups fresh corn kernels
- 2 cups turkey, leftover, chopped or shredded
- 1/2 cup fresh parsley leaves, optional, chopped, for garnish
Directions
Step 1 –In a 4-quart saucepan over medium heat, melt the butter.
Step 2 –Add the onion to the melted butter and cook, stirring often, until tender.
Step 3 –Add the carrots, the celery, the lima beans, the broth, the salt, and the pepper to the onion and bring to a boil over high heat.
Step 4 –Reduce the heat to a simmer and cook until the veggies are tender, about 5 minutes.
Step 5 –Stir the rice and the corn into the soup and bring to a boil.
Step 6 –Stir the turkey into the soup mixture and cook until it is heated through.
Step 7 –Serve the soup sprinkled with the parsley.
