Savory Sausage Breakfast Casserole

All your favorites, of course! Get ready to enjoy some spicy breakfast sausage, fluffy eggs, sweet red peppers, and crispy hashbrowns… oh yes, and melty cheese. It’s going to be a good morning, indeed, thanks to Savory Sausage Breakfast Casserole!

Ingredients

  • butter, for greasing a baking dish
  • 1 pound breakfast sausage
  • 4 scallions, chopped, white and green parts separated
  • 1 red bell pepper, chopped
  • 10 eggs
  • 1 1/4 cups heavy cream
  • 1 tablespoon Dijon mustard
  • 2 teaspoons hot sauce, optional
  • 1 1/2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 cups sharp cheddar cheese, shredded, divided
  • 1 (30-ounce) package frozen shredded hashbrowns, thawed

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Grease a 9×13-inch baking dish with butter.

Step 3 –In a large skillet over medium-high heat, cook the sausage, while breaking it up into small pieces, until it is no longer pink, about 6-8 minutes.

Step 4 –Add the white parts from the scallions and the red bell pepper to the sausage and cook until the veggies are tender, about 3 minutes.

Step 5 –Transfer the meat mixture to a plate to slightly cool.

Step 6 –In a large bowl, whisk the eggs, the heavy cream, the Dijon mustard, the hot sauce, the salt, the black pepper, and 1/2 of the green parts from the scallions together.

Step 7 –Gently fold 1 1/2 cups of the cheese, the hashbrowns, and the meat mixture into the egg mixture.

Step 8 –Transfer the casserole mixture into the prepared baking dish and smooth it into an even layer.

Step 9 –Cover the dish with foil and bake for 50 minutes.

Step 10 –Uncover and top the casserole with the remaining cheese.

Step 11 –Increase the oven temperature to 400 degrees F and bake until the center of the casserole is set and the top is golden-brown, about 10-15 minutes.

Step 12 –Let the casserole rest for 10 minutes.

Step 13 –Top the casserole with the remaining green parts from the scallions.

Step 14 –Serve.
