Seriously Good Prime Rib

Oh yeah, this is good. Unbelievably good. Seriously, you have to get a slice! Seriously Good Prime Rib is simply seasoned, letting the succulent, rich beef flavor take center stage. Then it’s truly slow roasted so that it’s extra-tender and juicy, and finally (briefly) roasted under high heat so there is a lovely jacket for texture. You won’t believe how delicious Seriously Good Prime Rib is until you try it for yourself!

Ingredients

  • 1 (6-pound) standing rib roast or prime rib
  • kosher salt, to taste
  • freshly ground black pepper, to taste

Directions

Step 1 –Preheat the oven to the lowest possible temperature setting, 150 degrees F preferably; some ovens cannot hold a temperature below 250 degrees F.

Step 2 –Season the roast generously with the salt and the pepper.

Step 3 –Place the roast, fat cap-side up, on a V-rack set in a large roasting pan or on a wire rack set in a rimmed baking sheet.

Step 4 –Roast until the meat reaches an internal temperature of 120-125 degrees F for rare, 130 degrees F for medium-rare, or 135 degrees F for medium, about 5 hours 30 minutes-6 hours 30 minutes in an oven set to 150 degrees F or about 3 hours 30 minutes-4 hours in an oven set to 250 degrees F.

Step 5 –Remove the roast from the oven and tent it loosely with aluminum foil.

Step 6 –Place the covered roast in a warm spot in the kitchen and allow it to rest for at least 30 minutes and up to 1 hour 30 minutes.

Step 7 –Preheat the oven to the highest possible temperature setting, preferably 500-550 degrees F.

Step 8 –Ten minutes before serving, remove the foil and roast the meat again until well-browned and crisp on the exterior, about 6-10 minutes.

Step 9 –Transfer the roast from the oven and carve into slices.

Step 10 –Serve.
