Ingredients
- 1 small red onion, sliced thin
- 1 yellow bell pepper, sliced thin
- 1 red bell pepper, sliced thin
- 1 orange bell pepper, sliced thin
- 1 1/2 pounds shrimp, peeled and deveined
- 1 1/2 tablespoons extra virgin olive oil
- 1 teaspoon kosher salt
- freshly ground pepper, to taste
- 2 teaspoons chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- lime, optional, for squeezing
- fresh cilantro, optional, chopped, for garnish
- tortillas, warmed, for serving
Directions
Step 1 –Preheat the oven to 450 degrees F.
Step 2 –Using a large mixing bowl, add together the onion, yellow bell peppers, red bell peppers, orange bell peppers, shrimp, olive oil, salt, pepper, chili powder, garlic powder, onion powder, ground cumin, and paprika, mixing it all evenly together.
Step 3 –Spray a baking tray with a non-stick cooking spray.
Step 4 –Spread out the shrimp, bell peppers, and onions all on the same baking sheet.
Step 5 –Roast for about 8 minutes.
Step 6 –Turn on the broiler and cook until the shrimp is cooked through, about 2 minutes.
Step 7 –Squeeze the juice from the lime all over the fajita mix and top it with the fresh cilantro.
