Simple Parmesan Soup

This one-pot sipper requires minimal effort yet is loaded with bouncy pasta and tender peas swimming in a salty, savory sea of broth. Ingredients

  • 3 cups chicken stock
  • 3 cups water
  • 1 large yellow onion, peeled and cut into wedges
  • 6 large cloves garlic, crushed
  • 3/4 cup parmesan rinds, chopped into 1-inch pieces
  • salt, to taste
  • 1 cup pasta shells or other small pasta
  • 1 cup frozen peas
  • freshly ground pepper, to taste
  • parmesan, grated and for serving

Directions

Step 1 –In a medium pot over high heat, combine the chicken stock, the water, the onion, the garlic, and the parmesan rinds.

Step 2 –Bring the chicken stock mixture to a boil, then lower the heat.

Step 3 –Simmer the chicken stock mixture for 30 minutes.

Step 4 –Strain the broth into a clean pot, pressing down on the solids to extract all the liquid.

Step 5 –Season the broth to taste with the salt.

Step 6 –Bring the broth to a boil.

Step 7 –Add the pasta to the boiling broth and cook for 2 minutes less than the package directions recommend.

Step 8 –Add the peas to the pasta mixture and cook until the pasta is al dente, about 2 minutes.

Step 9 –Serve in bowls and generously sprinkle with the parmesan and the black pepper.
