Simple Spanish Rice

Sometimes also known as Mexican rice, Simple Spanish Rice is a wonderful companion to some of your favorite dishes! The golden, lightly seasoned, yet deeply savory rice is great piled within or served alongside burritos and tacos, or plated up under quesadillas! It doesn’t even take too long to throw Simple Spanish Rice together, less than half an hour, so you can make it without trouble as you finish up the main course. Sounds encantador to us (please forgive us if our Spanish isn’t perfect)!

Ingredients

  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon butter
  • 1 cup white rice
  • 1 cup chicken broth or chicken stock
  • 1 cup tomato sauce or tomato puree
  • 1 1/2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon dried oregano
  • 1/4 cup fresh tomatoes, optional, diced, seeded, and drained

Directions

Step 1 –In a medium saucepan over medium heat, melt the olive oil and the butter together.

Step 2 –Add the rice to the saucepan and cook, stirring frequently, until the rice is toasted, about 2-3 minutes.

Step 3 –Stir the chicken broth, the tomato sauce, the chili powder, the cumin, the garlic salt, the oregano, and the diced tomatoes into the rice.

Step 4 –Increase the heat to high and bring the mixture to a boil, stirring occasionally.

Step 5 –Stir the rice well and reduce the heat to low.

Step 6 –Place the lid on the pot and cook at a gentle simmer until the rice is tender and the liquid is absorbed, about 20-24 minutes.

Step 7 –Allow the rice to rest, covered, and removed from heat, about 2-3 minutes.

Step 8 –Fluff the rice with a fork and serve.
