Ingredients

  • 1 (1 1/2-pound) beef flank steak, cut into 6 equal portions
  • 1 onion, sliced
  • 1 green pepper, cut into strips
  • 1 red pepper, cut into strips
  • 1 yellow pepper, cut into strips
  • 1 jalapeño pepper, optional, chopped
  • 1 tablespoon cilantro
  • 1 garlic clove, minced
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/4 teaspoon salt
  • 8 ounces tomatoes, chopped
  • 12 (8-inch) flour tortillas

Directions

Step 1 -In a slow cooker, combine the steak, the onions, the green peppers, the red peppers, the yellow peppers, the jalapeño peppers, the cilantro, the garlic, the chili powder, the cumin, the coriander, the salt, and the tomatoes.

Step 2 -Place the lid on the slow cooker and cook on low for 8-10 hours.

Step 3 -Transfer the steak to a cutting board, and shred it using a fork and tongs.

Step 4 -Return the shredded meat to the slow cooker and stir to combine all of the flavors.

Step 5 -Serve the fajitas hot in the tortillas.
