Small Town Chicken

Small Town Chicken celebrates all these things with its golden-brown, crispy crunch and juicy, tender flavors. It’s simple, sure, but that’s what life should be all about. See? Ingredients

  • 4 cups all-purpose flour, divided
  • 2 tablespoons garlic salt
  • 1 tablespoon paprika
  • 3 teaspoons pepper, divided
  • 2 1/2 teaspoons poultry seasoning
  • 2 large eggs
  • 1 1/2 cups water
  • 1 teaspoon salt
  • 2 (3.5-4-pound) broiler/fryer chickens, cut up
  • oil, to taste, for deep-fat frying

Directions

Step 1 –In a large shallow dish, combine 2 2/3 cups of the flour, the garlic salt, the paprika, 2 1/2 teaspoons of the pepper, and the poultry seasoning.

Step 2 –In another shallow dish, beat the eggs and the water.

Step 3 –Add the salt, the remaining flour, and the remaining pepper to the egg mixture.

Step 4 –Dip the chicken pieces in the egg mixture, then place them in the flour mixture, and turn to coat. Repeat until all the chicken pieces have been coated.

Step 5 –In a deep-fat fryer, heat the oil to 375 degrees F.

Step 6 –Fry the chicken pieces, several at a time, until the chicken is golden-brown and the internal temperature reaches 165 degrees F, about 7-8 minutes per side.

Step 7 –Drain the fried chicken on paper towels.

Step 8 –Serve.
