Ingredients
For the sesame dressing:
- 1/4 cup rice vinegar
- 2 tablespoons tamari
- 1/2 teaspoon toasted sesame oil
- 1 teaspoon ginger, grated
- 1 clove garlic, grated
- 1/2 teaspoon maple syrup or honey
For the bowls:
- 6 ounces soba noodles, such as Hakubaku™ organic soba noodles, or whole-wheat spaghetti noodles
- fresh lemon juice, to taste
- 2 avocados, sliced
- 2 cups snap peas, blanched
- 1/4 cup edamame
- 1 watermelon radish or 2 red radishes, very thinly sliced
- 1/4 cup fresh mint leaves
Optional, for serving:
- sesame seeds, to taste
- tamari, to taste
- sesame oil, to taste
Directions
Step 1 –In a large bowl, add the rice vinegar, 2 tablespoons of the tamari, 1/2 teaspoon of the sesame oil, the ginger, the garlic, and the maple syrup and whisk to combine.
Step 2 –In a pot of boiling water, cook the soba noodles to al dente, according to the package directions.
Step 3 –Drain the noodles and rinse them well under cold water.
Step 4 –Add the cooked noodles to the dressing and toss to combine.
Step 5 –Divide the noodles between two bowls and drizzle each evenly with the lemon juice.
Step 6 –Top each of the bowls evenly with the avocado slices, the snap peas, the edamame, the radishes, and the mint leaves.
Step 7 –Serve the bowls topped with the sesame seeds, the remaining tamari, and the remaining sesame oil.
