Ready to try something new (that’s also healthy and delicious)? Soba Salad is a simple way to go! You will feel super satisfied as your chopsticks capture the bouncy noodles that are all tangled up with the fresh veggies and drizzled with a savory, ginger-sesame dressing. Sounds pretty tasty, huh? Life is too short to eat the same thing all the time, so give this refreshing and amazing Soba Salad a try!

Ingredients

For the sesame dressing:

  • 1/4 cup rice vinegar
  • 2 tablespoons tamari
  • 1/2 teaspoon toasted sesame oil
  • 1 teaspoon ginger, grated
  • 1 clove garlic, grated
  • 1/2 teaspoon maple syrup or honey

For the bowls:

  • 6 ounces soba noodles, such as Hakubaku™ organic soba noodles, or whole-wheat spaghetti noodles
  • fresh lemon juice, to taste
  • 2 avocados, sliced
  • 2 cups snap peas, blanched
  • 1/4 cup edamame
  • 1 watermelon radish or 2 red radishes, very thinly sliced
  • 1/4 cup fresh mint leaves

Optional, for serving:

  • sesame seeds, to taste
  • tamari, to taste
  • sesame oil, to taste

Directions

Step 1 –In a large bowl, add the rice vinegar, 2 tablespoons of the tamari, 1/2 teaspoon of the sesame oil, the ginger, the garlic, and the maple syrup and whisk to combine.

Step 2 –In a pot of boiling water, cook the soba noodles to al dente, according to the package directions.

Step 3 –Drain the noodles and rinse them well under cold water.

Step 4 –Add the cooked noodles to the dressing and toss to combine.

Step 5 –Divide the noodles between two bowls and drizzle each evenly with the lemon juice.

Step 6 –Top each of the bowls evenly with the avocado slices, the snap peas, the edamame, the radishes, and the mint leaves.
