Ingredients

  • 1 pound ground beef
  • 1 (15-ounce) can tomato sauce
  • 1/2 teaspoon salt, plus more, to taste
  • 1/2 teaspoon ground black pepper, plus more, to taste
  • 1/2 teaspoon garlic powder, plus more, to taste
  • 8 ounces egg noodles
  • 1/2 cup sour cream
  • 1 cup small curd cottage cheese
  • 1 1/2 cups cheese, shredded, divided into thirds
  • 1/4 cup green onions, diced, plus more, to taste, for serving

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Spray a 9×13-inch casserole dish with cooking spray.

Step 3 –In a large skillet over medium heat, cook the beef, while crumbling, until it is no longer pink. Drain the excess grease.

Step 4 –Stir the tomato sauce, 1/2 teaspoon of the salt, 1/2 teaspoon of the pepper, and 1/2 teaspoon of the garlic powder into the beef. Adjust the heat to low and simmer the beef mixture for 5 minutes.

Step 5 –In a large pot of boiling water, cook the egg noodles to al dente, according to the package directions. Drain the noodles.

Step 6 –In a medium bowl, combine the sour cream, the cottage cheese, 1/3 of the shredded cheese, 1/4 cup of the green onions, the salt, the pepper, the garlic powder, and the cooked noodles and stir to combine.

Step 7 –Spread 1/2 of the noodle mixture into the bottom of the prepared casserole dish.

Step 8 –Spread 1/2 of the meat mixture over the noodle mixture and sprinkle with 1/3 of the cheese.

Step 9 –Repeat the layers with the remaining noodle mixture, the remaining meat mixture, and the remaining shredded cheese.

Step 10 –Bake the casserole until the cheese has melted, about 25 minutes.

Step 11 –Sprinkle the casserole with the green onions and serve.
