Special-Date Steaks

When you’re making dinner for that special someone, and it needs to be a special night, not just any meal will do. You need something as special as they are to you! These Special-Date Steaks are extra tender and juicy, with their perfectly rosy interiors and their gorgeously golden-brown jackets (it’s like they’re dressed up for the evening, as well)! They are even prepared with an extra rich, herbal butter-basting sauce, which just makes them that much tastier. Special-Date Steaks make date night even more special, or makes an ordinary day feel like a date night!

Ingredients

  • 2 (1-pound, about 1 1/4-inch-thick) steaks, such as New York strip, ribeye, or top sirloin
  • 1 1/2 teaspoons sea salt
  • 1 teaspoon black pepper
  • 1/2 tablespoon vegetable oil, can substitute with any high-heat cooking oil of your choice
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, peeled and quartered
  • 1 sprig fresh rosemary

Directions

Step 1 –Pat the steaks dry with paper towels.

Step 2 –Season the steaks with the salt and the pepper.

Step 3 –Heat a cast-iron pan until it is very hot.

Step 4 –Add the oil, swirling to coat and allowing it to become very hot.

Step 5 –Add the steaks and sear on the first side until a brown crust forms, about 4 minutes.

Step 6 –Flip and cook the steaks until a crust forms on the other side, about 3-4 minutes.

Step 7 –Turn the steaks onto each of their sides, rendering and searing the fat on the edges, about 1 minute per edge.

Step 8 –Reduce the heat to medium.

Step 9 –Immediately add the butter, the garlic, and the rosemary to the pan.

Step 10 –Baste the steaks using the melted butter, tilting the pan so the butter pools and is easy to scoop up with a spoon, and continue butter-basting the steak for about 1 minute. If you desire more doneness, leave the steaks on for longer, continuing to butter-baste the steaks as they cook.

Step 11 –Transfer the steaks to a cutting board, cover them loosely with foil, and allow them to rest, about 10 minutes.

Step 12 –Slice the steaks against the grain into 1/2-inch strips.

Step 13 –Serve drizzled with the extra butter-basting sauce.
