Ingredients
- 1 tablespoon olive oil
- 1 onion, finely diced
- 2 cloves garlic, minced
- 1 carrot, peeled and finely diced
- 3 chestnut mushrooms, finely diced
- 1 pound ground beef
- 1/2 cup red wine
- 3 tablespoons tomato purée
- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 1 tablespoon Worcestershire sauce
- 1 beef stock cube, crumbled
- 1 (28-ounce) can chopped tomatoes
- 1/2 tablespoon light brown sugar
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 10 1/2 ounces dried spaghetti
- scallions, to taste, chopped, for garnish
- parmesan, to taste, grated, for garnish
Directions
Step 1 –Heat the oil in a frying pan over medium-high heat.
Step 2 –Add the onion and cook, stirring often, until the onion softens, about 5 minutes.
Step 3 –Add the garlic and cook until fragrant, about 1 minute.
Step 4 –Add the carrots and the mushrooms and cook until starting to soften, about 2-3 minutes.
Step 5 –Add the ground beef and cook, while crumbling, until browned, about 5-6 minutes.
Step 6 –Add the wine and bring the mixture to a boil.
Step 7 –Let the beef mixture bubble, stirring until reduced by three quarters, about 2-3 minutes.
Step 8 –Add the tomato purée, the oregano, the thyme, the Worcestershire sauce, the beef stock cube, the canned tomatoes and their juices, the brown sugar, the salt, and the pepper and stir to combine.
Step 9 –Bring the sauce mixture to a boil.
Step 10 –Reduce the heat to low and simmer until thickened, about 15-20 minutes.
Step 11 –Bring a large pot of salted water to a boil.
Step 12 –Add the spaghetti to the boiling water and cook until al dente, about 10-12 minutes.
Step 13 –Drain the spaghetti.
Step 14 –Divide the spaghetti between six bowls and then top each with an even amount of the Bolognese.
Step 15 –Garnish each bowl with the scallions and the parmesan.
Step 16 –Serve.
