Spectacular Spaghetti Carbonara

Spectacular Spaghetti Carbonara shakes up the carbonara game, allowing any home chef to make it in under half an hour and enjoy the delicious fruits of their easy labors! The spaghetti is tender, the bacon is crisp and succulent, and the garlic is aromatic! But the heart and soul of this carbonara is the rich, creamy sauce that cooks right on the hot pasta, and Spectacular Spaghetti Carbonara has that in spades! Ingredients

  • 12 ounces spaghetti
  • 3 ounces bacon
  • 2 cloves garlic, minced
  • 3 large eggs
  • 3/4 cup parmesan cheese, grated, divided
  • freshly cracked pepper, to taste
  • salt, to taste
  • fresh parsley, to taste

Directions

Step 1 –Bring a large pot of salted water to a boil over high heat.

Step 2 –Add the pasta to the water, stir, and cook until al dente, according to the package instructions.

Step 3 –Reserve one cup of the pasta water and then drain the noodles.

Step 4 –While the pasta is cooking, chop the bacon into small pieces on a clean surface.

Step 5 –In a large skillet over medium-low heat, cook the bacon until brown and crispy, about 5-8 minutes.

Step 6 –Remove the bacon from the skillet and place it on a clean plate.

Step 7 –In the same skillet, cook the minced garlic over low heat until fragrant and softened, about 1 minute.

Step 8 –Turn off the heat.

Step 9 –Whisk together the eggs, 1/2 cup of the parmesan cheese, and the pepper, to taste, in a medium bowl.

Step 10 –In the same skillet with the garlic, add 1/4 cup of the reserved pasta water. Stir the warm water in the skillet, scraping the browned bits off the bottom of the surface.

Step 11 –Add the drained pasta to the skillet and toss thoroughly in the liquid.

Step 12 –Pour the egg and cheese mixture over the pasta and toss immediately, stirring until a creamy sauce forms.

Step 13 –Add the remaining parmesan cheese, the salt, the pepper, and the chopped bacon and toss the mixture again. If the pasta becomes too dry or thick, add some of the remaining pasta water.

Step 14 –Top with parsley leaves and serve!
