  • 12 ounces penne pasta
  • 1 tablespoon olive oil
  • 12 ounces Italian sausage links
  • 1 yellow onion, diced
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 1 (6 ounce) can tomato paste
  • 1 teaspoon dried basil
  • 3/4 teaspoon salt
  • freshly cracked black pepper, to taste
  • 1/2 tablespoon brown sugar
  • 1/4 pound frozen broccoli
  • 1/4 pound frozen spinach
  • 2 ounces feta cheese


Step 1 –Cook the pasta to al dente according to the package directions.

Step 2 –Drain the cooked pasta.

Step 3 –While the pasta is cooking, heat the olive oil over medium-high heat in a large skillet.

Step 4 –Add the sausages to the hot oil and cook until they are slightly browned and firm enough to slice, about 5-7 minutes.

Step 5 –Remove the sausages from the skillet and slice them into medallions.

Step 6 –In the same skillet, sauté the onion and the garlic until softened and fragrant, about 2-3 minutes. As you sauté, scrape the browned bits from the bottom of the skillet.

Step 7 –Once the onions are tender and translucent, add the sliced sausages to the skillet and cook until the sausages are cooked through, about 5 minutes.

Step 8 –Add the can of crushed tomatoes, the tomato paste, the basil, the salt, the pepper, and the brown sugar, stirring until the tomato paste is evenly combined.

Step 9 –Add in the broccoli and spinach and stir to combine. Allow the veggies to heat through, stirring occasionally.

Step 10 –Add the pasta and stir to combine.

Step 11 –Crumble the feta into the pot and stir.

Step 12 –Serve!
