Ingredients

  • 1/2 pound bacon strips, chopped
  • 1 (16-ounce) package fettuccine
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup half-and-half
  • 4 large eggs
  • 1/2 cup Romano cheese, grated, plus more, to taste, for garnish
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • fresh parsley leaves, to taste, for garnish

Directions

Step 1 –In a large skillet over medium heat, add the bacon and cook, while stirring occasionally, until crisp, about 5-7 minutes.

Step 2 –Using a slotted spoon, transfer the bacon to paper towels to drain.

Step 3 –Reserve 1 tablespoon of the drippings in the skillet, draining the remainder.

Step 4 –In a Dutch oven filled with salted, boiling water, add the fettuccine and cook it to al dente, according to the package directions.

Step 5 –Drain the pasta and return it to the pot.

Step 6 –Heat the drippings in the skillet over medium heat.

Step 7 –Add the onions to the drippings and cook, while stirring, until tender, about 2-3 minutes.

Step 8 –Add the garlic and cook, while stirring, until fragrant, about 1 minute.

Step 9 –Reduce the heat to medium-low.

Step 10 –Add the half-and-half to the onion-garlic mixture and stir to combine.

Step 11 –In a small bowl, add the eggs and beat lightly.

Step 12 –Slowly add a little of the heated cream mixture into the eggs, while whisking vigorously, until the eggs are tempered.

Step 13 –Add the egg mixture to the skillet, while whisking constantly, and cook until a thermometer reads 160 degrees F, about 8-10 minutes; make sure to keep stirring so the eggs don’t scramble.

Step 14 –Add 1/2 cup of the cheese, the salt, the pepper, and the bacon into the sauce and stir to combine.

Step 15 –Add the fettuccine and toss to combine.

Step 16 –Serve garnished with the parsley and the extra cheese.
