Stay-Home Thai Peanut Chicken

Go out? Like, go outside? No thanks, we’d much rather stay in. We can bring the restaurant right into our kitchen with Stay-Home Thai Peanut Chicken. The sweet, savory, spicy, nutty, Thai-inspired peanut sauce is just so amazing you’ll want to eat it with a spoon. When chicken drumsticks are marinated in that sauce and then brushed with even more while it roasts to perfection… well, you may have trouble finding enough rice to eat it with! Stay-Home Thai Peanut Chicken will have you turning down invites to go out!

Ingredients

  • 1 clove garlic, minced
  • 1-inch knob fresh ginger, peeled and grated
  • 1/2 lime, juiced
  • 1/2 tablespoon chili garlic sauce
  • 1 1/2 tablespoons soy sauce
  • 1 tablespoon honey or brown sugar
  • 1 teaspoon toasted sesame oil
  • 2 tablespoons vegetable oil
  • 1/2 cup natural peanut butter
  • 3 tablespoons hot water
  • 1/2 bunch fresh cilantro, roughly chopped, divided
  • 3 pounds chicken drumsticks
  • rice, optional, to taste, cooked and hot, for serving

Directions

Step 1 –In a medium bowl, add the garlic, the ginger, the lime juice, the chili garlic sauce, the soy sauce, the honey, the sesame oil, and the vegetable oil and whisk to combine.

Step 2 –Add the peanut butter and the hot water to the sauce mixture and whisk until it is fairly smooth.

Step 3 –Add about 3/4 of the cilantro to the sauce mixture and stir to combine. Reserve about 1/4 for garnish.

Step 4 –Reserve 1/2 cup of the peanut sauce.

Step 5 –In a gallon-sized resealable plastic bag, add the chicken drumsticks and the remaining peanut sauce.

Step 6 –Remove as much of the air from the bag as possible and seal it.

Step 7 –Massage the bag to help coat all of the chicken drumsticks.

Step 8 –Marinate the chicken in the refrigerator for at least 30 minutes and up to overnight.

Step 9 –Preheat the oven to 375 degrees F.

Step 10 –In a 9×13-inch casserole dish, add the chicken drumsticks along with the marinade, spreading it out into a single layer.

Step 11 –Bake the chicken drumsticks for 30 minutes.

Step 12 –Brush the reserved peanut sauce over the top of the chicken drumsticks.

Step 13 –Bake again until the chicken drumsticks reach an internal temperature of 165 degrees F in their thickest parts, about 15-30 minutes.

Step 14 –Garnish with the reserved cilantro and serve with the rice.
