Summer Strawberry Salad

Summer just isn’t complete without the taste of fresh, vibrant strawberries. You’ll want them for every meal of the day while they’re ripe and fresh… and with this Summer Strawberry Salad, you can do just that! The salad puts strawberries front and center, with some sunny oranges added to complement their sweet flavor, all resting on a platform of garden-fresh spinach! Goat cheese adds some creaminess, while the dressing adds a balance of sourness and tang to keep things interesting. Embrace the season to its fullest with this Summer Strawberry Salad!

Ingredients

For the dressing:

  • 1/3 cup extra-virgin olive oil
  • 1/4 cup fresh lemon juice
  • 3 tablespoons honey
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon poppy seeds
  • 2 teaspoons Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

For the salad:

  • 2 (5-ounce) containers baby spinach
  • 1 pound strawberries, halved or sliced
  • 2 oranges, peeled and sliced
  • 1 1/2 cups pecans, toasted and chopped
  • 4 ounces goat cheese, crumbled

Directions

Step 1 –Combine the olive oil, the lemon juice, the honey, the apple cider vinegar, the poppy seeds, the Dijon mustard, the salt, and the pepper in a small jar.

Step 2 –Seal the jar and shake vigorously to combine the dressing.

Step 3 –Just before serving, add the spinach to a large bowl or platter.

Step 4 –Top the spinach with 1/2 of the strawberries and 1/2 of the orange slices.

Step 5 –Drizzle the salad with 1/2 of the dressing and toss gently to coat.

Step 6 –Top the salad with the remaining strawberries, the remaining orange slices, the pecans, and the goat cheese.

Step 7 –Drizzle the salad with the desired amount of the remaining dressing.

Step 8 –Serve.
