Sweater Weather Stew

Sweater Weather Stew is here to warm your soul and your body via your taste buds. This rich, tomato-based brew is bountiful in flavor and a beauty for the eye to behold! Nutty brown rice, hot pepper broth, and creamy protein-packed beans all make Sweater Weather Stew hearty, heartwarming, and just plain tasty! Bundle up with a bowl!

Ingredients

  • 4 cups water
  • 1 (28-ounce) can diced tomatoes
  • 1 1/2 cups green peppers, chopped
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 teaspoon chili powder
  • 1/2 teaspoon hot pepper sauce
  • 1/2 teaspoon salt
  • 1 bay leaf
  • 4 cups brown rice, cooked
  • 2 (16-ounce) cans kidney beans, rinsed and drained
  • 3 (8-ounce) cans tomato sauce
  • 1 (16-ounce) package frozen sliced okra

Directions

Step 1 –In a large Dutch oven, add the water, the diced tomatoes and their juices, the green peppers, the onion, the garlic, the Italian seasoning, the chili powder, the hot pepper sauce, the salt, and the bay leaf and stir to combine.

Step 2 –Bring the broth mixture to a boil.

Step 3 –Reduce the heat and simmer the broth mixture, uncovered, for 5 minutes.

Step 4 –Add the rice, the beans, the tomato sauce, and the okra and simmer, uncovered, until the vegetables are tender, about 8-10 minutes.

Step 5 –Remove and discard the bay leaf.

Step 6 –Serve.
