Ingredients
- 1 (18-pound) whole turkey
- 8 cups prepared stuffing
- 1/2 cup unsalted butter, softened
- salt, to taste
- freshly ground black pepper, to taste
- 6 cups turkey stock, divided
Directions
Step 1 –Place a rack in the lowest position of the oven and preheat the oven to 325 degrees F.
Step 2 –Remove the turkey neck and giblets, then rinse the turkey and pat it dry with paper towels.
Step 3 –Place the turkey, breast side-up, on a rack in a roasting pan.
Step 4 –Loosely fill the turkey cavity with the stuffing, then rub the skin with the butter and season with the salt and the pepper.
Step 5 –Pour 2 cups of the turkey stock into the roasting pan.
Step 6 –Loosely tent the turkey with aluminum foil.
Step 7 –Roast the turkey, basting with the pan juices every 30 minutes, for about 2 hours 30 minutes. As the drippings evaporate, add some of the remaining turkey stock to the pan, 1-2 cups at a time.
Step 8 –Discard the foil and continue to roast the turkey until the thickest part of the thigh reaches an internal temperature of 165 degrees F, about 1 hour 30 minutes more.
Step 9 –Transfer the turkey to a large serving platter and let it stand, about 20-30 minutes.
Step 10 –Slice and serve.
