Taco Tuesday Spaghetti

It’s Taco Tuesday Spaghetti night! Yahoo! Every third Tuesday, we ditch the shells and grab the spaghetti noodles for a fun little twist. Those tender noodles get smothered in your favorite taco-seasoned meat, a sprinkle of melty cheese, and fresh cilantro. We think it adds a little excitement to the week, and it switches things up just enough so we don’t get too bored. But of course, you can have Taco Tuesday Spaghetti any night of the week! Whenever you get the craving for some fun, you know what dish to turn to!

Ingredients

  • 2 tablespoons olive oil
  • 1 pound ground beef
  • 1/4 cup yellow onions, chopped
  • 1/4 cup taco seasoning
  • 1 (10-ounce) can diced tomatoes with green chilies
  • 8 ounces spaghetti noodles, uncooked
  • 3 cups water
  • 4 ounces cheddar cheese, shredded, divided
  • 1/2 cup cilantro, chopped, for garnish

Directions

Step 1 –In a 12-inch skillet over medium heat, heat the oil.

Step 2 –Add the ground beef and the onions to the oil and cook, while crumbling the meat, until the beef is no longer pink and the onions are soft and translucent.

Step 3 –Add the taco seasoning, the diced tomatoes with green chilies (plus their juices), the spaghetti noodles, and the water to the beef mixture and bring it to a boil over high heat.

Step 4 –Reduce the heat to low, cover, and simmer the spaghetti mixture until heated through and the pasta is tender, for 15 minutes

Step 5 –Sprinkle 1/2 of the shredded cheese over the spaghetti mixture and stir to combine.

Step 6 –Serve the spaghetti garnished with the remaining shredded cheese and the cilantro.
