Teddy R’s Birthday Cake

Ingredients

  • 1 cup butter
  • 1 1/2 cups sugar
  • 3 eggs, well beaten
  • 2 cups flour
  • 1/2 teaspoon salt
  • 1/2 cup cocoa, plus more, for dusting the pan
  • 1 teaspoon baking soda
  • 1 cup cold black coffee
  • 1 tablespoon vinegar
  • 1/2 teaspoon vanilla
  • chocolate syrup, optional, for serving

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Grease and dust an 8×8-inch cake pan with the extra cocoa.

Step 3 –In a bowl, cream the butter, while adding the sugar to it, a little at a time, until they are fully combined.

Step 4 –Add the eggs to the butter mixture and combine.

Step 5 –Sift the flour, the salt, the cocoa, and the baking soda together three times, into a bowl.

Step 6 –Alternate adding the coffee and the flour mixture to the butter mixture, stirring after each addition.

Step 7 –Add the vinegar and the vanilla to the batter and stir to combine.

Step 8 –Pour the batter in the prepared baking dish and bake until a toothpick inserted in the center comes out clean, about 30-40 minutes.

Step 9 –Slice and serve with a drizzle of the chocolate syrup.
