Ingredients
- 4 cups arugula or mixed greens
- 2 medium ripe tomatoes, cut into 1/4-inch-thick pieces
- 1/2 small red onion, sliced
- 8 ounces burrata, torn into bite-size pieces
- 2 tablespoons olive oil
- 2 tablespoons balsamic glaze
- 1/4 cup pesto, optional
- 1 tablespoon pine nuts or almonds, toasted
- 2 tablespoons fresh basil leaves, thinly sliced
Directions
Step 1 –Add the arugula to a large serving bowl.
Step 2 –Evenly layer the tomatoes on top of the arugula.
Step 3 –Evenly add the red onion on top of the tomatoes.
Step 4 –Arrange the torn burrata over the salad.
Step 5 –Evenly drizzle the olive oil, the balsamic glaze, and the pesto over top of the salad.
Step 6 –Evenly sprinkle the toasted pine nuts over the salad.
Step 7 –Serve garnished with the basil.
