Ultimate Chicken Rotini

Ingredients

  • 1 1/2 pounds chicken breasts, boneless, skinless, and cut into bite-size pieces
  • 2 cups water
  • 3 cups rotini pasta, uncooked
  • 1 (16-ounce) package frozen broccoli, cauliflower, and carrot blend
  • 1 (10-ounce) can diced tomatoes and green chilies, undrained
  • 8 ounces processed cheese, cut into 1/2-inch cubes

Directions

Step 1 –In a large skillet coated with cooking spray over medium-high heat, cook the chicken, while stirring, until the internal temperature is 165 degrees F, about 5 minutes.

Step 2 –Stir the water into the chicken and bring to a boil.

Step 3 –Add the pasta to the chicken mixture and stir.

Step 4 –Cover the chicken and pasta mixture and simmer on medium-low until the pasta is tender, about 10 minutes.

Step 5 –Add the broccoli blend, the diced tomatoes and green chilies, and the cheese to the pasta mixture, and cook, covered, stirring frequently, until the cheese has melted and the veggies are crisp-tender, about 5-7 minutes.

Step 6 –Serve.
