  • 1 1/2 pounds lobster meat, cooked and cut into 3/4-inch pieces
  • 1/4 cup mayonnaise
  • 1 1/2 tablespoons lemon juice
  • 1/4 cup celery, finely chopped, using only the tender inner stalks
  • 1 tablespoon chives, thinly sliced, plus more, to taste, for garnish
  • salt, to taste
  • pepper, to taste
  • 2 tablespoons butter, softened
  • 4 hot dog buns, split-top


Step 1 -Place the lobster meat, the mayonnaise, the lemon juice, the celery, 1 tablespoon of the chives, the salt, and the pepper in a bowl.

Step 2 -Stir gently to combine.

Step 3 -Spread the butter onto the outer sides of each bun.

Step 4 -Place the buns in a pan or on a griddle over medium heat.

Step 5 -Toast until golden-brown, about 2 to 3 minutes on each side.
