Ultimate Gameday Soup

Finger foods seem to get all the glory when it comes to sports-watching snacks, but it doesn’t get any easier (or cleaner) than holding a bowl and sipping up the heartiness of this creamy, savory broccoli and cheddar soup! Your gal pal will be glad to hear there’s no mess in the living room and your buddies will be hyped about its flavor. See? The Ultimate Gameday Soup brings the “W” all around. Now, here’s to hoping your team can bring home the win, too!

Ingredients

For the soup:

  • 3 tablespoons butter
  • 5 ribs celery, finely chopped
  • 3 medium carrots, finely chopped
  • 1 small onion, finely chopped
  • 4 cups fresh broccoli florets, chopped
  • 1/4 cup sweet red pepper, chopped
  • 4 (14.5-ounce) cans chicken broth
  • 1/2 teaspoon black pepper
  • 1/2 cup all-purpose flour
  • 1/2 cup water
  • 3 cups cheddar cheese, shredded
  • 1 (8-ounce) package cream cheese, cubed
  • 1 (12-ounce) bottle beer or nonalcoholic beer

Optional toppings:

  • cheddar cheese, to taste, shredded
  • bacon, to taste, cooked and crumbled
  • green onions, to taste, chopped
  • sour cream, to taste
  • soft pretzel bites, to taste

Directions

Step 1 –In a Dutch oven over medium-high heat, melt the butter.

Step 2 –Add the celery, the carrots, and the onions to the melted butter and sauté until they are crisp-tender.

Step 3 –Add the broccoli and the red pepper to the veggie mixture, then stir in the broth and the black pepper.

Step 4 –In a small bowl, add the flour and the water and stir until it is smooth.

Step 5 –Gradually stir the flour mixture into the soup mixture, then bring to a boil.

Step 6 –Reduce the heat to a simmer and cook until the soup has thickened and the vegetables are tender, 25-30 minutes.

Step 7 –Stir 3 cups of the cheddar cheese, the cream cheese, and the beer into the soup until the cheese has melted. Do not bring to a boil.

Step 8 –Serve the soup with your preferred toppings.
