Walnut Coffee Cake

This Walnut Coffee Cake is designed for walnut lovers, pure and simple. There are so many walnuts in this, it’s enough to drive you nuts! Walnuts in the streusel, both on top and in the center, ensure that each bite is crunchy and sweet, with jammy raisins in the center keeping things interesting. Then there’s the cake itself, which is fluffy, moist, and delicious! Walnut Coffee Cake is a great breakfast or teatime treat if you simply can’t get enough crunch in your life!

Ingredients

  • 1 cup unsalted butter, room temperature, plus more, to taste, for greasing the pan
  • 2 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1 1/2 cups walnuts, chopped
  • 3/4 cup brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup raisins
  • 1 cup granulated sugar
  • 3 large eggs
  • 2 teaspoons pure vanilla extract
  • 1 cup sour cream

Directions

Step 1 -Preheat the oven to 375 degrees F.

Step 2 -Using the extra butter, grease an angel food cake pan.

Step 3 -In a medium bowl, add the flour, the baking powder, the baking soda, and the salt and whisk to combine.

Step 4 -In a small bowl, add the walnuts, the brown sugar, and the cinnamon and stir to combine.

Step 5 -Transfer 1/2 of the walnut mixture to a bowl and set it aside.

Step 6 -Add the raisins to the remaining walnut mixture and stir to combine.

Step 7 -In a mixing bowl, add the remaining 1 cup of the butter and the granulated sugar and, using an electric hand mixer, beat to combine on medium speed, about 2 minutes.

Step 8 -Add the eggs, 1 at a time, and beat after each addition until combined.

Step 9 -Add the vanilla and beat to combine.

Step 10 -Reduce the mixer speed to low.

Step 11 -Slowly add the flour mixture to the butter mixture and beat until just combined.

Step 12 -Add the sour cream and mix until just combined.

Step 13 -Spread 1/2 of the batter evenly in the prepared pan.

Step 14 -Sprinkle the batter with the raisin mixture.

Step 15 -Top the raisin mixture with the remaining batter.

Step 16 -Sprinkle the reserved walnut mixture over top.

Step 17 -Bake for 30 minutes.

Step 18 -Reduce the oven temperature to 300 degrees F and bake until a wooden toothpick inserted into the center comes out clean, about 20-25 minutes.

Step 19 -Transfer the cake to a wire rack to cool completely.

Step 20 -Invert the pan and transfer the cake to a serving platter.

Step 21 -Slice and serve.
