We-Have-Visitors Casserole

*Knock, knock, knock* Oh, no! Someone’s at the door! Did you know someone was coming today… and right around dinnertime of all times? Nope, sure didn’t. Well, don’t panic. That’s what We-Have-Visitors Casserole is for! In under an hour, those unexpected dearest guests of yours will be chowing down on a creamy, crispy concoction of yummy chicken and healthy broccoli. Hopefully you can pass the cooking time by catching up and enjoying the company… even though it wasn’t in your plans for the day. Everything is better together, right? We’ll let you be the judge of that one. But the next time this happens, We-Have-Visitors Casserole will be your saving grace!

Ingredients

  • 4 chicken breasts, boneless and skinless
  • 1 cup chicken broth
  • 2 cloves garlic
  • 1/2 onion, cut into 2 wedges
  • 1/2 cup butter, melted
  • 4 cups seasoned stuffing mix
  • 1 (15-ounce) can cream of chicken soup
  • 1 pint sour cream
  • 8 ounces frozen broccoli cuts

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –In a skillet over medium-high heat, add the chicken breasts, the broth, the garlic, and the onions and bring to a boil.

Step 3 –Lower the heat to medium, cover, and simmer the chicken breasts until they reach an internal temperature of 165 degrees F, about 15-20 minutes.

Step 4 –Transfer the chicken to a plate, reserving the broth mixture, and shred it with two forks.

Step 5 –In a bowl, pour the melted butter over the stuffing mix and fluff together with a fork.

Step 6 –Spread 1/2 of the stuffing mixture into a glass 9×13-inch casserole dish.

Step 7 –In a bowl, whisk the cream of chicken soup, the sour cream, and the reserved broth mixture together.

Step 8 –Sprinkle the shredded chicken over the stuffing mixture.

Step 9 –Sprinkle the broccoli on top, then pour the soup mixture over the broccoli.

Step 10 –Top the soup mixture layer with the remaining stuffing mixture.

Step 11 –Bake the casserole until heated through, about 30 minutes.

Step 12 –Serve.
