Zesty Black-Eyed Pea Salad

This one has some zing in it! Zesty Black-Eyed Pea Salad uses creamy, hearty black-eyed peas as the base of its salad, holding up a mixture of spicy red onions, the refreshingly bright bell peppers, and of course, the namesake… zesty Italian dressing. This is a chilled salad that is cool in more ways than one and it is sure to make the most of its presence on your table! Zesty Black-Eyed Pea Salad will definitely add some pep in your step!

Ingredients

  • 12 ounces frozen black-eyed peas
  • salt, to taste
  • 1/3 cup red or purple onion, diced
  • 1/2 teaspoon garlic, minced
  • 1/3 cup green bell pepper, diced
  • 1/3 cup red bell pepper, diced
  • 1/3 cup Italian salad dressing

Directions

Step 1 –In a saucepan over high heat, add the peas and the salt, covering them with water and bringing the mixture to a rolling boil.

Step 2 –Reduce the heat to medium and cook the peas at a low, gentle boil until fork tender, about 40 minutes.

Step 3 –Drain the peas in a colander.

Step 4 –In a mixing bowl, gently combine the cooked peas, the onion, the garlic, the green bell peppers, the red bell peppers, and the salad dressing.

Step 5 –Cover the bowl tightly with plastic wrap and chill in the refrigerator for at least 2 hours and up to overnight.

Step 6 –Serve chilled.
