Z’s Tots

What’s the “z” in Z’s Tots? You might be surprised! When you bite into these little treats, you taste a blend of cheese, a hint of garlic, and something kind of earthy but a little bit sweet. Can you guess what the mysterious ingredient is? Zucchini, of course! That’s the savory secret to what makes Z’s Tots so tasty (and healthy)! You’re going to be shocked by how much you’ll love them!

  • 2 large eggs
  • 3 large zucchinis, grated and excess liquid squeezed out
  • 1/2 cup cheddar cheese, shredded
  • 1/2 cup parmesan, grated
  • 1 teaspoon dried oregano
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon kosher salt
  • ground black pepper, to taste
  • ketchup, to taste, for serving

Step 1 -Preheat the oven to 400 degrees F.

Step 2 -Coat a baking sheet with nonstick cooking spray.

Step 3 -In a large bowl, lightly beat the eggs.

Step 4 -Add the grated zucchinis, the cheddar, the parmesan, the oregano, the garlic powder, the salt, and the pepper to the beaten eggs and mix until it is well-combined.

Step 5 -Scoop out 1 tablespoon of the zucchini mixture and roll it into the shape of a tater tot.

Step 6 -Place the zucchini tot on the prepared baking sheet and repeat with the remaining zucchini mixture.

Step 7 -Bake the zucchini tots until they are golden, about 15-20 minutes.

Step 8 -Serve the zucchini tots with the ketchup.
