Ingredients
For the fajita seasoning:
- 1 teaspoon cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
- salt, to taste
- pepper, to taste
- 1–1 1/2 pounds chicken breasts, boneless, skinless, and cut into small thin strips
- 1 lime, juiced
- 2 tablespoons olive oil, divided
- 2 green bell peppers, cored and thinly sliced
- 1 medium red onion, thinly sliced
- small flour or corn tortillas, for serving
Directions
Step 1 –Combine all of the cumin, chili powder, garlic powder, onion powder, paprika, salt, and pepper together in a small bowl, reserving 1/2 teaspoon to be used while cooking the bell pepper and onion and the remaining seasonings for the chicken.
Step 2 –In a large bowl, toss the chicken with the lime juice and the fajita seasoning.
Step 3 –In a large cast-iron skillet, heat 1 tablespoon of the oil over medium-low heat.
Step 4 –Add the peppers, onions, and reserved 1/2 teaspoon of the fajita seasoning.
Step 5 –Cook until tender and slightly charred, about 5-7 minutes.
Step 6 –Transfer the veggies to a plate and set them aside.
Step 7 –Add the remaining 1 tablespoon of the olive oil to the same skillet and turn up the heat to medium.
Step 8 –Cook the seasoned chicken until golden on the outside and fully cooked through, reading 165 degrees F when checked with a meat thermometer, about 5 to 7 minutes.
Step 9 –Return the bell peppers and onions back to the skillet once the chicken is fully cooked to heat everything through.
Step 10 –Serve immediately with tortillas and desired toppings.
