Ingredients
- 1 (9-ounce) package cheese tortellini
- 2 tablespoons olive oil
- 1/2 pound Italian sausage
- 1/2 cup onions, finely chopped
- 3 cups tomato sauce
- 1/4 cup fresh parsley, finely chopped
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1 cup mozzarella cheese, shredded
- 2 tablespoons parmesan cheese, grated
Directions
Step 1 –Preheat the oven to 350 degrees F.
Step 2 –In a pot of salted boiling water, cook the tortellini to al dente, according to the package directions. Drain the pasta.
Step 3 –Heat the oil in a large cast-iron skillet over medium-high heat until it shimmers, about 2 minutes.
Step 4 –Add the sausage to the oil and cook, while crumbling, until it is no longer pink, about 5-7 minutes.
Step 5 –Stir the onions into the sausage mixture and sauté until tender, about 3-4 minutes.
Step 6 –Add the tomato sauce, the parsley, the salt, and the pepper to the onion-sausage mixture and stir well to combine. Bring to a simmer.
Step 7 –Reduce the heat to low and let the onion-sausage mixture simmer, uncovered, for 5 minutes.
Step 8 –Add the cooked tortellini to the onion-sausage mixture and stir well to coat.
Step 9 –Sprinkle the mozzarella and the parmesan evenly over the top of the sausage-pasta mixture.
Step 10 –Bake the sausage-pasta mixture until the cheeses melt and turn golden-brown, about 10-12 minutes.
Step 11 –Allow the sausage-pasta mixture to cool for 5 minutes.
Step 12 –Serve.
