Kentucky Cheese Pudding

Ingredients

  • 1/2 cup butter, divided
  • 6 tablespoons all-purpose flour
  • 3 cups half-and-half
  • 1/2 teaspoon salt
  • 1/4 teaspoon fresh ground black pepper
  • 1 1/2 cups soda crackers, crumbled and divided
  • 6 eggs, hard-boiled and chopped
  • 3 cups sharp cheddar cheese, grated
  • 1 cup pimento, drained and chopped

Directions

Step 1 –Preheat the oven to 325 degrees F.

Step 2 –Grease a 1 1/2-quart casserole dish.

Step 3 –In a saucepan, melt 6 tablespoons of the butter over moderately-low heat.

Step 4 –Add the flour and whisk until the mixture is a smooth paste.

Step 5 –Add the half-and-half, the salt, and the pepper, continuing to whisk until the sauce thickens.

Step 6 –Remove the saucepan from the heat.

Step 7 –Spoon 1/2 cup of the sauce into the prepared casserole dish.

Step 8 –Sprinkle 1/2 of the cracker crumbs over the sauce.

Step 9 –Arrange the eggs, the cheese, and the pimentos in layers in the prepared casserole dish, repeating until all the ingredients have been used.

Step 10 –Top the casserole with the remaining cracker crumbs.

Step 11 –Dot the top of the casserole with the remaining butter.

Step 12 –Bake until the casserole is bubbling and golden, about 30 minutes.
