Ingredients
- 2 (8-ounce) medium zucchinis, sliced 1/4-inch-thick
- 1 tablespoon extra-virgin olive oil, plus more, to taste, for greasing the grill
- 1 tablespoon red wine vinegar
- 1 teaspoon dried parsley
- 1 teaspoon dried basil
- 1/2 teaspoon garlic powder
- kosher salt, to taste
- freshly ground black pepper, to taste
Directions
Step 1 –Preheat the grill to medium-high.
Step 2 –Toss the zucchini in a bowl with the olive oil, the red wine vinegar, the parsley, the basil, and the garlic powder.
Step 3 –Lay the zucchini on a plate or cutting board, and season it with the salt and the pepper.
Step 4 –Once the grill is hot, carefully grease the grates with the olive oil.
Step 5 –Use tongs to place the zucchini on the grill. Cover and cook for 2-3 minutes. Flip and repeat with the other side.
Step 6 –Once tender, remove the zucchini and add more of the salt and more of the pepper.
Step 7 –Serve immediately!
