Ingredients

  • 3/4 cup all-purpose flour
  • 3/4 cup whole wheat flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 2 egg whites
  • 2 tablespoons granular sweetener or sugar alternative
  • 2 tablespoons unsweetened applesauce
  • 1/4 cup orange juice
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries

Directions

Step 1 –Preheat the oven to 400 degrees F.

Step 2 –Prepare a muffin tin by spraying it with cooking spray.

Step 3 –Using a large mixing bowl, mix together all-purpose flour, whole wheat flour, baking powder, and baking soda. Mix until it is fully combined.

Step 4 –In a different mixing bowl, add together the egg whites, sweetener, applesauce, blueberries, orange juice, and vanilla extract, mixing it well.

Step 5 –Fold the wet ingredient mixture into the dry ingredient mixture.

Step 6 –Add in the blueberries and then fold it in lightly so as to not crush the blueberries.

Step 7 –Divide up the batter evenly, scoop it into the sprayed muffin cups.

Step 8 –Finally, bake the muffins until a toothpick that you insert into the center of one of the muffins comes out clean, about 15 minutes.

Step 9 –Move the muffins to a rack to cool from the oven.

Step 10 –Serve warm.
